Green Pesto Linguine with Courgetti

  • 200 g linguine pasta
  • 150 g green asparagus tips
  • 2 courgettes made into ribbons with a vegetable peeler
  • 2 handfuls of rocket leaves
  • 75 g roasted pine nuts
  • Juice & rind of 1 lemon
  • 60 ml extra virgin olive oil
  • Salt and pepper to season
  • Fresh fresh basil as finisher/topping
  • 2 packs Apetina® Green pesto snack

Bring a large pot of salted water to the boil and cook the linguine as per the pack instructions. Two minutes before the end of the cooking time, add the asparagus. You can also grill the asparagus.

Drain the linguine and asparagus and return to the pan. Tip in all of the remaining ingredients, holding back half of the Apetina® Green Pesto Portion Pack.

Toss together well and serve with the remaining Apetina® Green Pesto Portion Pack scattered over the top.
