Pimp your sandwich – 8 delicious new ideas for your next sandwich

Baguettes, levain bread, rye bread, bagels, cold-raised pumpkin-seed rolls – it is all beautiful music to our ears. We love bread!

At home in our kitchen, there is no such thing as a strict, no-carb diet. Instead, we believe in eating everything in moderation and eating a lot of vegetables. That’s easy now that it’s summer and there are so many great vegetables in season.

And baking your own bread just makes it even better! Or drop by your local bakery and buy a better-quality bread. It is so much more flavourful than that mass-produced bread that has been transported across great distances.

Fill the bread with all manner of spreads and vegetables and you get a hearty meal with endless possibilities for variation. Sandwiches taste great cold on picnics or heated in the oven or on a sandwich toaster. The following are some of our favourites:

Cold sandwiches

Avocado and white cheese spread with cherry tomatoes
Mash an avocado with a fork and combine with white cheese for a delicious green spread. Spread on some bread, like focaccia, and top with baby salad leaves and cherry tomatoes. Drizzle a little olive oil on top and take the sandwiches with you on a picnic!

A really good hummus with lightly grilled asparagus
Blend together almonds, chickpeas, oil, tahini, lemon juice, garlic, chilli, cumin and turmeric for a wonderful hummus! Toss the asparagus on the grill or a grill pan. Or why not try that gas burner which has otherwise been gathering dust waiting around for the next crème brûlée? Stuff everything in a pita or Lebanese bread. A perfect sandwich for the beach.

Creamy tuna spread with fresh salad leave
The secret to a perfect tuna spread is to mash the tuna carefully with a fork to remove all the lumps. Then we add chopped pickles, capers, a bit of yoghurt and some mayonnaise. Lemon rind is also delicious! Works well on sandwich bread or a fine levain bread. Bring on a ramble in the woods and don’t forget the hot chocolate!

Prawns with homemade mayo
If you have lovely prawns like we have in Gothenburg, you don’t need much more. They also taste great on fresh baguettes with a little mayo and dill. Prawn sandwiches taste best on the cliffs at the seaside!

Hot sandwiches

Classic croque monsieur – mustard, cheese and tomato
We like to mix some spicy mustard with the ordinary mustard. And top with a flavourful cheddar. Tastes great on a light sourdough bread. Grilled in the oven, these are perfect for a summer evening on the patio.

Cream cheese topped with butter-roasted chanterelles
One of life’s perfect pleasures! We spice the chanterelles with a dash of curry to bring out the mushroom flavour. Arrange the mushrooms on rye levain bread spread with cream cheese and grill in the oven. A great sandwich after a ramble in the woods!

Pizza sandwich – mozzarella, tomatoes and pesto
Our best emergency dinner. But that doesn’t mean it’s dull. Most breads work well with this combo and the sandwich can be heated in the oven or on a sandwich toaster – or why not on the barbecue?

Buttery spinach with mozzarella and sun-dried tomatoes
Buy a large bag of spinach! This is a great way to get lots of antioxidants, because spinach in butter tastes SO good. And it tastes even better topped with mozzarella and sun-dried tomatoes. This sandwich works well on a sandwich toaster and is perfect for movie night on the balcony or in the garden!
