Smokey Cauliflower Wings

Ingredients

Wings:

  • 1 medium-sized cauliflower
  • 2 dl flour
  • 2 dl milk
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp ground coriander
  • 1 tsp chilli powder
  • 2 dl smokey barbeque sauce

Dipping sauce:

Experiment with different flavours of Apetina cheese cubes and /or cream cheese as a base for the creamist dipping sauce in town

Serve the wings and dip as an appetiser, snack, side, or as the hero of a delicious vegetarian meal.

Sweet, sticky, smokey and finger licking good. These crispy cauliflower wings is one of those vegetarian dishes that can stand to its original meaty version, the Buffalo chicken wings. In fact, the cauliflower wing bowl is always the first bowl emptied, thanks to the amazingly succulent flavours.

Have you been longing to taste those cauliflower wings you can’t help seeing all over the internet? Really, if you haven’t tasted them yet, it’s about time. The flavour and deliciously sticky looking appearance come from your chosen bottle. Yes, you are allowed to turn to store bought sauces this time! I love the smokey BBQ sauce myself, but you can just as well choose your favourite hot wings sauce or something oriental for example, teriyaki or hoi sin. Can’t decide? Just flavour your wings half and half with two sauces. But at the end of the day, it all comes down to the dipping sauce. It hast to offer lots of flavour and smooth creaminess to ease the spices. Lemon & cheese dipping sauce is perfect. Use marinated cubes and give a bit of extra boost with fresh lemon zest and garlic.

Instructions:

Chop the cauliflower into florets. Whisk together flour, milk, salt, paprika, onion powder, coriander, and chilli powder. Dip the cauliflower florets into the batter one at a time and spread on a baking sheet lined with parchment paper. Bake 10 min in 220 °C. Remove the wings from the oven and put them briefly in a bowl where you can toss them around in your chosen BBQ sauce. Place the wings back on the baking sheet and grill them for another 5 min in 250° C. Make the dipping sauce by combining the white cheese cubes with sour cream, mayo, lemon zest, garlic and herbs in a blender. season with salt and pepper. Serve the hot cauliflower wings with the lemon & cheese dipping sauce.
