Thai style pasta salad with Apetina white cheese mango & chili

Ingredients

Curry Chicken

• 200 g chicken breasts fillets
• 1 tsp hot curry powder (mild of medium alternative options)
• 0.5 tsp salt
• 0.5 tsp coconut oil

Salad

• 150 g white pasta e.g. penne
• 1 tbsp lime fruit juice
• 1 tbsp soy
• 1 tbsp sesame oil
• 1 pack Apetina® Mango & chili
• 0.5 red pepper cut in thin slices
• 100 g edamame beans
• 100 g diced cucumbers
• 100 g diced fresh mangos
• 4 spring onions sliced into thin rings
• 0.5 tsp salt
• Freshly cracked black pepper

Topping

• 1 tbsp roasted sesame seed
• lime fruit wedges

Twist

Serving suggestion: Split the salad into two bowls and serve with extra lime and a sprinkle of sesame on top. A delicious salad you can have on the go as well as at home.
