Begin by preparing your Apetina Paneer Cheese by cutting it into cubes.
Next combine all the batter ingredients, gradually adding in the water to form a smooth consistency similar to that of a pancake batter. Add the chunks of paneer and evenly coat.
Next place your wok over a high heat, add a good glug of oil and wait for your oil to heat well. Test the oil heat by adding one piece of paneer to begin with, it should fizz immediately and once it does add in the rest of your paneer.
Fry until golden and flip over and cook the other side. Once the paneer is cooked, remove and drain on paper towel.
In the remaining oil add in the vegetables and half of the chilli and briefly fry for a couple of minutes.
For the sweet and sour sauce combine all ingredients then add to the pan of vegetables, stir well then finally add the paneer back in. Warm the paneer through for a minute or so then serve with your cooked udon noodles or rice. Garnish with coriander and serve.
