Paneer bowl

Ingredients

Bowl

  • 2 packs of Apetina® Paneer , halved length wise and cut into 12 cubes
  • 0.5 tsp ground ground cumin
  • 0.5 tsp coriander seed
  • 0.5 tsp powdered ground turmeric
  • 0.5 tsp powdered chilli
  • 1 tsp sesame seed
  • 0.25 tsp salt
  • 2 tbsp vegetable oil
  • 1 tbsp butter
  • 3 carrots , skin removed and peel into ribbons
  • 1 cucumber , peel into ribbons, seeds discarded
  • 1 avocado , sliced length-wise
  • 1 romaine lettuce
  • 1 mango , diced

Marinade

  • 2 tbsp toasted sesame oil
  • 1 tsp runny honey
  • 4 tsp soy
  • 1 tsp toasted sesame seed

Twist

Spice up the bowl by using your favourite vegetables, cooked or raw.

Bowls are really the thing to be making these days, and here's a new one to try out. A delicious, vegetarian bowl with marinated paneer cheese, sweet mango and an Asian-inspired dressing.

Paneer:

Heat a non-stick frying pan, at a moderate and add the oil. When hot fry the Paneer pieces for 2-3 min. tossing from time to time to make sure it’s fried on all sides. Add the butter and any leftover spices and fry for a few min. more, still tossing from time to time.

Bowl:

Prepare all the vegetables and arrange in a bowl. Finish off with the paneer cubes.

Marinade:

Stir together until well-combined. Drizzle some dressing on the salad, and serve the remaining on the side.
