Mediterranean Pie

Ingredients

Crust:

  • 3 dl flour
  • 125 g butter
  • 2 tbsp water

Filling:

  • 125 g fresh spinach
  • 2 cloves of garlic - minced
  • butter
  • 0.5 tsp salt
  • a pinch of black pepper
  • 1.5 tsp ground cumin
  • 150 g Apetina® Classic creamy block
  • 250 g Apetina® Cottage cheese 4%
  • 1 dl cream
  • 3 eggs
  • 1 dl black olive

Twist

The combination of white cheese and cottage cheese gives a nice firm and flavourful pie filling.

Serving

Serve with a good fresh salad and a creamy dip such as tzatziki.

Delicious Mediterrenean pie that tastes great both warm and cold, and makes a nice addition to the buffet table.

Incorporate the butter into the flour with your hands until it forms a crumbly mass. Add water and work it into a dough. Do not overwork the dough, as the butter will warm up and make it harder to work with. Press the dough into a pie mold, about 24 cm in diameter. Leave it in the fridge for about 30 minutes. Preheat the oven to 200 °. Rinse the spinach. Fry the onion in butter. Add the spinach and stir until wilted. Add salt, pepper and cumin. Meanwhile pre-bake the pie crust for approx. 10 minutes. Break or cut the cheese into pieces. Mix cheese, cottage cheese, cream and eggs. Stir in spinach and olives. Pour mixture into pie crust and bake in the oven for about 30 minutes
