Lamb Wraps with Mint Pesto

Ingredients

  • 2 shallots
  • 1 dl fresh leaf parsley
  • 1 dl fresh mint
  • 1 tbsp dried rosemary
  • 1 tsp garlic
  • 1 tbsp ground cumin
  • 500 g (cooked) lamb
  • 4 tortillas
  • green salad

Pesto

  • 2 dl fresh mint
  • 2 tbsp pine nuts
  • 0.5 fresh red chilli
  • approx. 2 dl good olive oil
  • 150 g Apetina® Original slice
  • salt and pepper

Twist

Make the most of your leftovers and make this recipe using lamb roast cut in thin slices.

Serving

Serve with a nice glass of red wine.

Flavourful tortillas with slices of lamb and a tasty homemade white cheese and mint pesto.

Mix all ingredients for the pesto in a blender until it forms a smooth paste. Set aside. Chop onion and garlic and fry in a pan. Cut the cooked lamb meat in slices and season. Mix in the onions and fresh herbs. Heat the tortillas 5 minutes in a 200 C oven. Fill the tortillas with salad and meat and top with pesto.
