You can substitute the dates for additional herbs and white cheese to make it a savory snack, or you can serve them with a sweet yogurt dipping sauce for dessert.

The salty white cheese and the sweet dates give the perfect combination of sweet and savoury in one bite. I have added some fresh rosemary and orange zest to the filling for additional aroma, but feel free to omit or play around with your favourite add-ons - either way these little snacks are packed with flavour.
Instructions:In a food processor combine dates, white cheese, nuts, rosemary and orange zest and pulse until you have a sticky dough. Cut each of the filo sheets into 5 long pieces. Brush them with butter or oil and place a tsp. of filling in the bottom corner. Roll the corner up to the other side, getting the shape of a triangle. Keep rolling from side to side, until you have a little firm triangle covered in several layers of filo pastry (see picture). Place all the triangles on a lined baking sheet and brush with extra butter/oil and bake in the oven for 12 min at 200 C until golden and crispy.
